Meat and meat product consumption: consumers’ preferences, behavior and perception

The quality of meat and meat products depends on intrinsic and extrinsic factors, which can sometimes be altered or controlled to increase desirability. Importantly, quality perception depends on the consumer and is complex and multifactorial. Identifying and quantifying the factors that affect consumers’ behaviour regarding meat and meat product consumption would allow meat sector to better satisfy consumer expectations, demands and needs. In this paper, an overview of the psychological, sensorial and marketing factors that influence consumer behaviour regarding meat and meat products preference, behaviour and perception is performed.
