Beef carcass decontamination: lasting effectiveness of a steam vacuum treatment

The Vapovac® or Steam Vacuum system enables an effective decontamination of carcasses. The aim of this study, funded by FranceAgriMer, was to assess on the basis of a sample of bovine carcasses, that the bacterial reduction level obtained immediately after treatment was still effective after cooling. The decontaminating effect proved to be less pronounced than expected, compared to figures published in the scientific literature. Nevertheless, the use of a steam vacuum appeared to be justified to control global microflora within 24 hours after slaughtering, especially for Pseudomonas.
